My mom wants me to date a nurse, but I’m dating a barista.

My mom has always been a tiger mom. She has been trying to get me to date this male nurse who likes me… he’s SOOO boring… but the guy I’m kinda seeing works at as a barista and I’m ok with that. How should I tell my mom to back off without being disrespectful?
